Vegetables, grains, and meats all play a part in healthy human diets, we are omnivores.
ANY crop which has been bred for desireable traits for hundreds or thousands of years, is genetically modified. That it happened via prolonged unnatural selection rather than in a laboratory does not make one plant safer than another.
I discovered the taste of artisan breads made with ancient grains a few years back. It was a revelation to me. A typical supermarket bread loaf lists over 50 ingredients, covered by a bag of petrocehemical plastic film. Artisan breads typically have 5-6 ingredients.
