You don't need a lot of guns. You can only shoot one at a time any way. If you are growing food on nut trees your biggest enemies will be the squirrels. A typical farmstead has three guns. A 22 for squirrels. A shotgun for other small game ( works well on squirrels as well) and birds and a deer rifle for long range big game. A Doomstead might add a hand gun for self defense kept in the bedroom close at hand for nighttime intruders and an extra rifle each for other family members to present a united and effective defense. A good supply of ammunition and or reloading equipment and components is prudent as we have already seen supply disruptions on that end. By a good supply I mean about a 1000 rounds for the 22 and a couple of hundred rounds for each of the other guns. That will seem like a lot to a none gun owner but believe me it is not if you are actively using your guns and keeping in practice with them.
